An ordinance amending Chapter 286 of,the Saint Paul
Legislative Code, as amended, pertaining to milk and
milk products. This is an emergency ordinance rendered
necessary for the preservation of the public peace,
health, and safety.
THE COUNCIL OF THE CITY OF SAINT PAUL DOES ORDAIN:

Section -1. That Section)bb6 of the Saint Paul Legislative
Code, as amended, be and the same is hereby further amended by
adding the following:
11(43) Eggnog is a fluid milk product consisting of milk
or milk products to which has been added fresh, frozen,
or dried egg yolks or whole eggs:, with or without sugar
or other approved sweeteners, approved flavoring and
coloring and approved stabilizer. It shall contain
by weight not more than 0.5 percent stabilizer, not
less than six (6) percent milk fat, not less than one
�1))percent egg yolk solids and not less than twelve
12 percent total milk solids. Eggnog shall be
pasteurized in approved and properly operating equip-
ment so that every particle is heated and continuously
h -ld for the following minimum specified times and
temperatures:
1550 F. and held at or above this temperature for
at least 30 minutes.
1750 F. and held at or above this temperature for
at least 25 seconds.
"(44) Eggnog Flavored Milk. Eggnog flavored milk is
a milk product consisting of a mixture of -gat least 3.5
percent butterfat, at least 0.5 percent egg yolk solids,
sweetener, and flavoring. Emulsifier and a maximum of
0.5 percent stabilizer may be added."
Section 2. This ordinance is hereby declared to be an
emergency ; b - finance rendered necessary for,the preservation of the
public peace-'health, and safety.
Section 3. This ordinance shall take effect and be in :t
force from and after its passage, approval and publication.
