1 WHEREAS, Chicago Beef Company d/b/a Giggles Chicago Style Eatery, located at 2112
2 Ford Pazkway, in Saint Paul, has requested a waiver of the 45-day notice requirement for
3 issuance of On-Sale Malt and Wine licenses; and

5 WHEREAS, the Highland District Council has agreed to the waiver of the notice

8 WHEREAS, the Council finds that the application is in order and there are no grounds £or
9 denial of the license and that failure to grant the waiver and the consequent delay in approving
10 the license would cause exceptional and unusual hardship to the license applicant; and

WHEREAS, the licensee agrees that in the event a complaint is received prior to the
expiration of the 45-day period and the complaint provides a basis for adverse action against the
license, that the Office of License, Inspections and Environmental Protection may direct the
licensee to nrunediately discontinue all operations until a public hearing is scheduled, and that
the licensee shall comply with said directive; now, therefore, be it

The Highland District Council has no concerns regarding the new Wine and Beer
License for Chicago Beef. The new partner has strong ties to the area and we
believe that he will be an asset to both the residential and the business
communities. This application was heard by both our Community Development
Committee and Highland District Council Board, both groups voted unanimously
to support the application and to do so in an expedited manner.
